Charles Weber’s culinary background is, in a word, diverse! He emphasizes seasonal cooking and is always introducing new products into his constantly evolving menu. His background is strongly rooted in French classic technique, though his cooking mentality is cutting edge.
He’s developed his own flair for upscale American cuisine, emphasizing regional culinary practices. His personal love for seafood often dominates his menus, which meshes well with his seasonal approach to cuisine. Expect great things from Weber, including the perfect blend of Monterey calamari, Spanish chorizo broth, and oregano, or the seasonal combo of swordfish, zanté currants, pine nuts, and sherry vinegar.
