As we celebrate the Grand Opening of the Twin Mills Club at Trilogy® Lake Norman, we’re thrilled to introduce you to Chef Ben Sholiton, Executive Chef of The Foundry, the signature restaurant in our spectacular new resort club.

Originally from Columbus, Ohio, Chef Ben began his career as an intern for the White House Press Office, followed by several years in television and media relations. In 2001, he left the television industry to pursue his true passion: creating and serving exceptional food and memorable experiences. After graduating from the initiating class of the Johnson & Wales Charlotte campus, Chef Ben chose to plant roots in the Charlotte area.  Over the course of his 17-year career in the food service industry, he’s cooked for some of the finest kitchens in the region, including Nellie’s Southern Kitchen in Belmont—for which he was featured on the Food Network special, “Family Restaurant, Jonas Style.” Ben is also the owner and head chef for Thyme & Again Catering, a business he has operated for ten years with his wife, Colleen. He loves to blend cooking styles and traditions and has a profound fondness for locally sourced food.

Chef Ben and his wife reside in North Charlotte and are the proud parents of 20-month-old Jacob, a Golden Lab named Roux, and a tortoise shell cat named Eleanor Rigby. Ben is an avid disc golfer and a die-hard Ohio State football fan.
