One of our popular amenities at Trilogy® at Monarch Dunes is the amazing bar at Adelina’s Bistro. Our bar is proud to offer the biggest whiskey and bourbon selection on the Central Coast. We’re also known for specialty cocktails that will knock your socks off, thanks to the talented mixologists who bring these spirits to life!

Our Mixologist of the Month for October is Justin Bruner, who is also our Food & Beverage Director at The Monarch Club. Prior to joining the Trilogy at Monarch Dunes team in December of 2013 as a bartender, Justin spent 13 years working at restaurants and bars between Santa Barbara and San Luis Obispo. “In my 20 years of working in restaurants, I have enjoyed learning from some of the best chefs and sommeliers in California,” Justin says.

Justin is a certified mixologist and a level one sommelier. He has a strong passion for the Food & Beverage industry and loves to share his knowledge with our Members and guests. His specialty cocktail for the month of October is the Harvest Mule. You can follow his recipe below if you’d like to make this at home!

Harvest Mule
• 1 oz Buffalo Trace Bourbon
• 1 oz Schonauer Apple Liqueur
• ½ oz Jack Daniels Tennessee Fire Cinnamon Whiskey
• ½ oz Fresh Lemon Juice
• Combine all of the above and finish with Fever Tree Ginger Beer. This cocktail is served in a copper challis over the rocks.
